Don’t wash liver directly. Instead take 8-10 cloves of garlic with their skin and crush them. Mix it in the liver and leave for 10-15 minutes.

Brown two medium onions thinly sliced. Add ginger garlic paste and now cook this.

Next wash the liver and add to this. Add yogurt half cup, red chili powder 1 tsp and salt and continue to cook.

Now cover and let cook.

When liver and yogurt juices are all relatively dry (but not very dry. You don’t want liver that feels like rubber) add black pepper powder and put on low flame.

Remove after fifteen minutes. Garnish with cilantro.
