Boneless skinless chicken thighs pounded flat 2 lb
Large white or yellow onion peeled and rings separated 1
Wooden skewers 1 long 10 inches
Marinade:
Greek yogurt two cups
Lemon juice 1/4 cup
Olive oil 3/4 cup
Salt 1 tbsp
Minced garlic 1 tbsp
Coriander powder 1 tbsp
Paprika 1 tbsp
Ground cumin 1 tbsp
Cayenne pepper 0.5 tsp
Cinnamon powder 1 tsp
Black pepper 1 tsp
Tzatziki Sauce
Large cucumber shredded
Greek yogurt two cups
Garlic minced 1 tbsp
Lemon juice 1/4 cup
Dill paste or fresh dill finely chopped 2 tbsp
Salt to taste
Pepper to taste
Marinate chicken in the above-described marinade and then thread the chicken on the skewer and put in the oven. In order to make the skewer stand flat on the skewer, chop off the root of the onion after peeling it and make it flat. Then first thread the skewer through it and then start layering the chicken on top. Preheat oven to 400F. Then bake for 1.5 hours until internal temperature reaches 165 F.
Next assemble the chicken, tzatziki sauce and salad vegetables, tomatoes and pita bread. Roll up and eat.
